Breakfast Casserole

Brunch, Eggs, Potatoes

Ingredients

20 ozs hash browns frozen or refrigerated

18 eggs

salt & pepper to taste

2 cups mild cheddar finely shredded

2 cups sharp cheddar finely shredded

16 ozs half & half

1 lb diced ham

1/4 cup onion chopped

1/4 cup green pepper chopped

OPTIONAL:

1 lb sausage browned & drained

bacon cooked & crumbled

Directions

Grease a 9x13” casserole dish.

Spread hash browns evenly over the bottom.
Crack eggs on top & break yolks.
Sprinkle with salt & pepper.
Sprinkle mild cheddar over all.
Evenly sprinkle ham, onion, peppers & cover with all the sharp cheddar.

Cover casserole & refrigerate overnight.

Preheat oven to 350.
Allow casserole to come to room temperature.

Bake for 60-90 minutes.

Recipe may be halved.
Use 10 eggs & 1 lb meat.
